3 heaping cups baby spinach

3 heaping cups arugula

½ avocado, sliced

Optional: toasted slivered almonds, shaved parmesan, or nutritional yeast for toppings

For the Lemon Dressing:

⅓ cup fresh lemon juice (about 2 lemons)

⅓ cup extra virgin olive oil

2 teaspoons Dijon mustard

12 tablespoons honey or maple syrup

½ teaspoon salt


Instructions

  1. In a large bowl, combine baby spinach, arugula, and avocado slices.

  2. In a separate small bowl, whisk together lemon juice, olive oil, Dijon mustard, honey/maple syrup, and salt until emulsified.

  3. Drizzle the dressing around the edges of the salad bowl.
