Ingredients
For the Salad:
3 heaping cups baby spinach
3 heaping cups arugula
½ avocado, sliced
Optional: toasted slivered almonds, shaved parmesan, or nutritional yeast for toppings
For the Lemon Dressing:
⅓ cup fresh lemon juice (about 2 lemons)
⅓ cup extra virgin olive oil
2 teaspoons Dijon mustard
1–2 tablespoons honey or maple syrup
½ teaspoon salt
