These chewy Snickerdoodle Cookie Bars are a delightful twist on the classic cookie. Soft, buttery, and topped with a sweet cinnamon-sugar layer, they’re perfect for family gatherings, bake sales, or a cozy treat at home.
Ingredients
2 ¾ cups (345 g) all-purpose flour
2 tsp cream of tartar
1 tsp baking soda
½ tsp fine salt
1 cup (225 g) unsalted butter, melted and cooled slightly
1 ¾ cups (350 g) granulated sugar, divided
2 large eggs + 1 yolk, room temperature
2 tsp pure vanilla extract
1 Tbsp ground cinnamon
Instructions
1. Preheat your oven to 350 °F / 175 °C. Line a 9 × 13-inch (23 × 33 cm) baking pan with parchment paper, leaving some overhang for easy removal.
2. In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.
3. In a large bowl, whisk melted butter with 1 ½ cups sugar until smooth. Add the eggs, yolk, and vanilla, mixing until fully combined.
4. Gradually add the dry ingredients into the wet mixture, stirring until a soft dough forms.
5. Spread the dough evenly into the prepared pan.
6. In a small bowl, mix the remaining ¼ cup sugar with the cinnamon. Sprinkle generously over the dough.
7. Bake for 22–25 minutes, or until the edges are golden and the center looks set.
8. Let cool completely before lifting from the pan and slicing into bars.
Notes
For extra flavor, try adding a pinch of nutmeg to the cinnamon-sugar topping. You can also drizzle a simple vanilla glaze over the cooled bars for a bakery-style finish.
